If you have leftover chicken, give this easy and tasty stew a try! Add your own combination of veggies if desired.
1 Tablespoon olive oil
1 medium chopped onion
1 green bell pepper, chopped
1 teaspoon crushed garlic
2 cups low sodium chicken broth
2 cups cooked, diced and boned chicken or turkey
2 cups stewed tomatoes
2 cups lima beans, canned or cooked
2 cups whole kernel corn, canned or cooked
1 Heat oil in a large pan. Add onion and pepper and cook in oil until tender.
2 Add all remaining ingredients. Bring to a simmer.
3 Serving Size: 1 cup.
