|1||Steam spinach until just wilted; about 2-3 minutes. Drain excess water. In a food processor or blender, puree the spinach, garlic, green onions, beans and 2 tbsp of lemon juice until smooth.|
|2||Remove from blender and fold in artichoke hearts and the remaining 1 tbsp of lemon juice. Add salt and pepper to taste.|
|3||Serve at room temperature or chilled. Serve with fresh cut veggies, toasted baguette slices, crackers or pita wedges.|
|4||Yield: 3 cups. Serving Size: 1/4 cup.|
