Choose a winter squash of your choice and start cooking! This creamy and savory soup is delightful.
1 Tablespoon olive oil
2 medium chopped onions
2 medium chopped carrots
2 minced garlic cloves
1 cup no salt added tomato sauce
5 cups low-sodium vegetable broth
4 cups winter squash, cooked
1 teaspoon dried sage
1 1/2 Tablespoon dried basil
1 In a large saucepan, warm oil over medium heat. Stir in onions, carrot and garlic.
2 Cook for about 5 minutes, covered. Stir in the tomato puree, chicken broth, cooked squash, and herbs.
3 Bring soup to a simmer and cook, covered, for 30 minutes.
