Try this filling and perfectly portioned recipe! Great for a speedy weeknight meal especially when paired with a green salad or fresh fruit.
Ingredients:
3 ounces grilled chicken breast
1 small whole grain hamburger bun
1 ounce light pepper jack cheese
1 whole green chili (canned), spilt in half
Sliced tomato and lettuce leaves
2 tsp spicy mustard
Directions:
1 Add pepper jack cheese to chicken while still warm to allow melting.
2 Spread bun with spicy mustard, add chicken with cheese and top with green chili, sliced tomatoes and lettuce leaves.
3 Serve with fruit salad or mixed green salad with light salad dressing.
4 ENJOY!
