Skip the burgers tonight and try a grilled to perfection, healthy portobello sandwich. Portobello mushrooms are hearty and tasty enough to stand in for burgers.
6 whole wheat hamburger buns
6 large Portobello mushrooms
6 large yellow bell peppers
6 slices red onion, sliced 1/2 inch thick
Fresh basil leaves
1/2 cup low fat Mozzarella cheese, shredded
1 Grill the vegetables carefully so they do not fall apart.
2 Place the veggies on the bottom half of the buns. Top with basil leaves and sprinkle the veggies with the cheese and let it melt.
3 Place the top bun on the sandwich. If desired, wrap whole sandwich in aluminum foil and place on warm grill to melt the cheese even more.
