Re-create traditionally high fat chicken salad and add a little crunch and color to your sandwich!
Ingredients:
8 oz cooked chicken breast, cut into chunks
1 cup shredded carrots
1 cup chopped red bell pepper
1 cup roasted or frozen corn (thawed)
2 green onions, sliced
1 teaspoon garlic powder
½ teaspoon black pepper
2 tbsp plain yogurt
2 tbsp low-fat mayo
Directions:
1 Combine all ingredients and mix well.
2 Serve in a lettuce leaf, whole wheat pita, whole grain tortilla or whole grain bread.
3 Top with lettuce, spinach and tomatoes.
4 ENJOY!
