No need to heat up the kitchen tonight! Start chopping and enjoy this smoky, southwest style salad!
1 head lettuce, chopped
3 tomatoes, seeded and chopped
1 small jicama, chopped
1 can white corn (no salt added), drained and rinsed
1 can black beans (50% less sodium), drained and rinsed
Fresh cilantro, chopped
12 oz. chicken grilled with barbecue sauce (about 3 tbsp), chopped
Lime Wedges
1 Combine all ingredients in large mixing bowl.
2 Immediately before serving, toss lightly with a low-fat dressing over your choice and squeeze lime over salad.
