This zesty pilaf adds a dose of fiber to your side dish.
Ingredients:
1 cup uncooked quinoa
1 tsp olive oil
1 medium onion, finely chopped
1 garlic clove, minced
1 medium carrot, cut into matchstick-size pieces
1 red, yellow or green bell pepper, chopped
½ tsp cumin
1/8 tsp red pepper flakes
1 cup lower sodium black beans, rinsed and drained
1 4-ounce can chopped green chiles
1 large tomato, chopped
½ cup chopped cilantro
Directions:
1 Prepare the quinoa according to package directions. Meanwhile, heat a large skillet over medium-high heat. Add the oil, onions, garlic, carrots, bell peppers, cumin and red pepper flakes; cook for 5 minutes.
2 Stir in the beans, green chiles, cilantro and tomato. Cook until heated through. Remove from heat and stir in the quinoa.
3 ENJOY!
