Add this colorful arrangement of vegetables, corn and beans to your dinner plate tonight and enjoy its southwest inspired flavors!
Ingredients:
1 1/2 cups Romaine lettuce
1/4 cup corn (frozen or no salt added canned)
1/4 cup chopped tomatoes
1/2 cup chopped bell peppers
1/4 cup mild diced green chiles
2 tablespoons sliced olives
1/8 avocado, cubed
1/2 cup black beans (choose lower sodium varieties)
2 tablespoons fat-free ranch dressing
1 small corn tortilla, toasted or, ½ cup baked tortilla chips
Directions:
1 Combine all salad ingredients in a medium bowl and toss with dressing. Top with crumbled tortilla chips.
2 ENJOY!
