This recipe is so easy to make and is full of terrific flavors! Chickpeas lend a nice texture and roasted peppers add bold flavor. Enjoy this dish anytime!
2 15-ounce can chickpeas (garbanzos), drained and rinsed
1 small jar (7 ounces) roasted red peppers packed in water, drained and sliced
1/4 cup sliced red onions
2 garlic cloves, chopped
1/4 cup chopped fresh basil
2 tablespoons olive oil
2 tablespoons fresh lemon juice
Black pepper to taste
1 Combine chickpeas, roasted peppers, red onions, garlic and basil in a medium bowl.
2 Add olive oil and lemon juice and toss gently to combine.
3 Cover and refrigerate for 1 hour before serving.
