Let these tasty protein-rich tofu spinach balls take the place of fatty meatballs. The medley of herbs, bread crumbs and tofu is delightful!
Ingredients:
1 10-ounce package frozen chopped spinach
1 10-ounce package extra firm silken tofu (such as Mori Nu Lite), mashed
1/4 cup finely chopped onions
1/4 cup flour
1/2 cup bread crumbs
1/8 teaspoon dried rosemary
1/8 teaspoon dried thyme
1/8 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 cup chopped walnuts
Directions:
1 Preheat oven to 350. Thaw spinach and strain well. Reserve liquid in case moisture is needed in the mix.
2 Combine flour, bread crumbs and seasonings; mix well.
3 Add spinach, onions, walnuts and mashed tofu to flour mixture and mix well with hands.
4 If mix is to dry, add a little spinach juice or eater.
5 Form into small balls. Place on a cookie sheet sprayed with cooking spray and bake for 30-40 minutes until lightly browned.
6 ENJOY!
