This recipe makes a perfect appetizer or side dish. Grilling intensifies the sweet flavor of the red bell peppers.
1 cup reduced-fat feta cheese
2 tablespoons chopped fresh basil
4 medium red bell peppers, quartered lengthwise
1/4 cup toasted pine nuts
1 Mix cheese, pine nuts and basil in a bowl.
2 Grill peppers on a lightly greased grill for about 5 minutes or until crisp-tender, turning once.
3 Remove peppers from grill. Spoon mixture into each pepper. Grill for 2-3 minutes more or until cheese is soft.
4 Yield: 16 pepper boats. Serving Size: 2 pepper boats.
