If you love garlic, you'll love this dressing! It's fat free but does not skimp on flavor. Serve over greens, pasta salad, chicken or fish.
Ingredients:
2 heads roasted garlic
2 tablespoons Dijon mustard
1.5-2 tablespoons honey
3 tablespoons cider vinegar
1/4 cup apple juice
1/4 tsp salt
Ground pepper to taste
Directions:
1 Squeeze garlic pulp from the roasted heads into a blender. Add the remaining indredients and puree until smooth and creamy. Will keep for 4 days (covered) in the refrigerator.
2 Yield: 1 cup. Serving Size: 2 tablespoons.
