4 ounces (1/4 block) Extra Firm Tofu, sliced
¼ cup salsa
¼ cup black beans
2 tbsp shredded reduced fat cheese
½ cup cooked brown rice
1 Preheat oven to 400°F
2 Place tin foil on table, add tofu, salsa, black beans and shredded cheese
3 Fold tin foil up over tofu and close shut
4 Bake for 30 minutes, be aware before opening tin foil, can be very hot
5 Make brown rice according to box directions
