Heart healthy and high fiber, barley and lentils make this soup a hearty meal itself.
Ingredients:
2 cups meatless crumbles such as Boca Meatless Ground Burger (or substitute 1/2 pound extra lean ground beef)
1 onion, chopped
1 cup dry lentils
1/2 cup pearled barley
3 cups mixed frozen vegetables
1 can no salt added diced tomatoes
6 cubes low-sodium vegetable bouillon cubes (or 6 tsp bouillon granules)
6 cups water
1 teaspoon garlic powder
black pepper to taste
Directions:
1 Heat a large soup pot over medium high heat. Add meatless crumbles and cook until browned, (for ground beef, cook about 5 minutes and drain off extra grease).
2 Add onion and sauté until tender, about 2 minutes.
3 Add the rest of the ingredients, bring to a boil then reduce to a simmer. Cook on low until barley is tender, about 45 minutes.
4 Serve immediately or refrigerate or freeze for later use.
