|1||Add olive oil to soup pot. Saute onions till softened.|
|2||Add garlic, mushrooms, carrots, seasonings, white wine, broth and 2 cans water. Bring to boil.|
|3||Add barley and simmer 45-55 minutes till barley is cooked and soup thickens. Can add one more can of water if it becomes too thick.|
|4||Season with salt and pepper to taste.|
|5||Yield: 12 1-cup servings.|
