Recreate this favorite Chinese dish at home - just a few simple changes make a big difference in calories & fat, without sacrificing flavor!
1 pound boneless, skinless chicken breasts
4 tablespoons lite soy sauce
3 teaspoons rice wine or dry sherry
1 tablespoon cornstarch
2 teaspoons sugar
1 teaspoon sesame oil
1 tablespoon canola oil
6 dried hot red chiles
2 garlic cloves, minced
1 tsp fresh minced ginger
2 green onions, sliced
1 cup chopped bell pepper
1 cup sliced carrots
1 In a large bowl, mix together 2 tbsp soy sauce, 2 tsp rice wine and cornstarch (add last).
2 Add cubed chicken to the soy sauce mixture and marinate in the refrigerator for about an hour. Meanwhile combine 2 tbsp soy sauce, sesame oil, 1 tsp rice wine and sugar and set aside.
3 Add canola oil to a wok or large nonstick frying pan and heat over medium-high heat. Add chicken (discard marinade) and stir-fry until done or no longer pink in the middle. Remove chicken and set aside.
4 Add garlic, ginger, bell peppers and carrots and stir-fry until veggies are tender. Add the chilis and green onions and cook for about 1 minute.
5 Add the sauce mixture and bring to a boil. Add the chicken and mix well.
6 Serve with steamed brown rice and broccoli.
