Silken tofu works wonders in sauces and it adds a nutritional boost. Try this brilliant, flavor-packed sun-dried tomato pesto pasta dish!
1 pound spaghetti or other long noodle (try whole wheat!)
1 cup sun-dried tomatoes packed in oil, chopped
3 garlic cloves, minced
1/2 cup pine nuts
1/3 cup fresh packed basil
1/2 teaspoon salt
1/3 cup silken tofu
1 Cook pasta according to package directions. Rinse, drain and set aside.
2 Strain the sun-dried tomatoes, separating the tomatoes from the oil (reserve both).
3 Put the pine nuts, garlic, basil and salt into a food processor and blend until combined.
4 Add the reserved oil and continue blending until the mixture forms a paste.
5 Add the tofu and blend until combined.
6 Toss the cooked pasta with the pesto mixture in a large bowl. Gently stir in the reserved sun-dried tomatoes. Serve warm or chilled.
