Non-fat milk and sour cream lighten this recipe and the garlic adds a nice touch!
Ingredients:
2 pounds red potatoes, washed and cubed
3 garlic cloves, crushed
1/4 cup nonfat milk
1/4 cup nonfat sour cream
2 tsp butter
Ground black pepper, to taste
Directions:
1 In a large stockpot, cover the potatoes with water. Bring to a boil. Reduce heat and simmer until tender, about 15 minutes. Drain the potatoes thoroughly and return to the stockpot.
2 Add the crushed garlic, milk, sour cream and butter to the potatoes. Mash to desired consistency. Season with black pepper to taste. Serve immediately.
