Don't let the word "fried" scare you - this popular Chinese dish is healthy! Serve with plenty of steamed or stir-fried veggies.
1 Tablespoon canola oil
2 beaten eggs
3 1/2 cups brown rice, cooked
1 cup chicken breast, cooked and chopped
1 cup mixed vegetables (such as peas, carrots and green beans), cooked and chopped
1/4 cup chopped water chestnuts
2 sliced green onions
1 Heat pan. Add 1 teaspoon of oil. Add eggs and scramble. Remove cooked eggs and set aside.
2 Add the rest of oil (2 teaspoons) to pan. Stir fry rice, breaking up lumps by pressing rice against pan.
3 Add chicken and vegetables. Stir-fry until heated.
4 Add green onions, water chestnuts and reserved eggs. Serve hot.
5 Serve with lite soy sauce and hot pepper sauce if desired.
