Pine Nuts, tomatoes, garlic and basil add a Mediterranean flair to this hearty pasta dish. It's rich and bold flavor will please your palate!
Ingredients:
2 teaspoons olive oil
4-6 cloves garlic, crushed
1/2 cup pine nuts
2 tablespoons fresh chopped basil
2 16 ounce cans no salt added diced tomatoes, undrained
2 tablespoons capers, drained and rinsed
8 ounces whole wheat penne pasta
Black pepper to taste
Directions:
1 Cook pasta according to directions.
2 While pasta is cooking, add olive oil to heated nonstick pan. Saute garlic but don’t let burn. Add pine nuts and saute nuts until slightly browned.
3 Drain pasta and set aside.
4 Stir tomatoes, capers and basil into pine nut and garlic mixture. Then slowly stir in pasta while keeping mixture on low heat. Season to taste with black pepper.
5 ENJOY!
