Chicken with tomato sauce, spices and kidney beans tastes just splendid served over brown rice with steamed broccoli on the side.
Ingredients:
1 can (15 ounce) kidney beans, drained and rinsed
1 garlic clove, crushed
1 medium onion, diced
1 teaspoon Italian seasoning
2 1/2 pound chicken thighs, skin removed and chopped
8 ounces tomato sauce
1/4 cup vinegar (such as cider or white)
1 teaspoon sugar
Salt and pepper to taste
Directions:
1 In large pot, cook chicken until almost done.
2 Add tomato sauce, vinegar, onion, garlic, seasoning, sugar, salt and pepper.
3 Simmer for about 30-40 minutes or until chicken is tender.
4 Add kidney beans and simmer for 5-10 more minutes.
