This recipe will remind you of Hamburger Helper but homemade and healthy with Tex-Mex flavors. Your kids won't even know the difference!
1 lb lean ground turkey
2 cups canned, crushed tomato
1 cup onion, diced
1/2 cup orzo pasta, uncooked
1 cup water
1 cup green bell pepper, chopped
1 Tbsp fresh cilantro, chopped
1/2 tsp chili powder
1/8 tsp hot sauce
16 oz can pinto beans, rinsed and drained
1 Cook ground turkey in a large skillet over medium heat, stirring occasionally, until browned. Drain.
2 Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 15 minutes, stirring frequently until pasta is tender.
