Potatoes combined with black beans and sauteed veggies make a classic breakfast burrito. Enjoy this tasty idea and feel healthy doing so!
1 high fiber tortilla
1/4 cup lower sodium black beans, drained and rinsed
1/2 cup diced red potatoes
1 garlic clove, minced
2 tablespoons diced carrots
2 tablespoons diced canned ortega chiles
2 tablespoons chopped green onion
2 tablespoons diced yellow squash
2 tablespoons diced tomato
2 tablespoons reduced-fat shredded
Swiss cheese
1/8 avocado, sliced
2 tablespoons salsa
1 Saute veggies until tender-crisp. Place cheese on warmed tortilla.
2 Top with sauteed veggies, avocado and salsa. Roll up tortilla.

Pretty good recipe. I did add eggs to it, just because I like eggs, and low fat sour cream on the side....that did it ...
