It's pumpkin season! Try something new by adding pumpkin to pancakes. The result - warm, spiced flap jacks with a touch of maple that are wholesome too!
2 cups whole wheat or oat bran pancake mix
1 1/2 cups water
1/2 cup pureed pumpkin (canned okay)
1/3 cup lite maple syrup
1/2 cup chopped walnuts
1/2 cup golden raisins
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 Mix all ingredients in a large bowl.
2 Pour ΒΌ cup of batter into a warmed non-stick skillet or griddle sprayed with cooking spray. Cook over medium-heat until lightly browned on each side.
3 Try serving with a dollop of vanilla yogurt.
