Thought mac 'n cheese was a No-No? Not anymore! Hot and homey, what could be better?
Ingredients:
1/2 pound or 2 cups dry macaroni pasta shells
2 tablespoons light butter
2 cups non-fat milk
2 tablespoons flour
1 teaspoon dry mustard
1 cup light shredded cheese
1/4 cup grated parmesan cheese
black pepper and garlic powder to taste
Directions:
1 Preheat oven to 350 degrees.
2 Cook pasta according to package directions and set aside. Heat milk in the microwave on high for 1-2 minutes, or until warm but not bubbling. Melt butter in a medium sized pan over low heat.
3 Mix flour and mustard together and slowly add to the melted butter. Whisk until there are no lumps.
4 Slowly add the warmed milk to the pan, whisking continuosly. Turn heat to medium and cook sauce for 3 minutes, while whisking, until thick.
5 Add cheese and cook sauce for 1 more minute until cheese is melted.
6 Mix cooked pasta and cheese sauce in a large bowl. Spray a baking dish with non-stick spray. Pour mixture into the baking dish. Spread evenly.
7 Sprinkle with parmesan cheese. Bake for 20-30 minutes. (YIELD: 6 SERVINGS)
