Everyone will love this wonderful combo of fresh spinach, chicken, sweet oranges and sesame seeds!
4 cups fresh spinach leaves
2 cups cherry, grape or sliced tomatoes
1 1/2 cups cooked chopped chicken breast
1 cup sliced mushrooms
1/2 cup sliced red onions
1 cup mandarin orange segments (fresh or canned in own juice and drained)
2 tablespoons toasted sesame seeds
1/4 cup fat free bottled Italian dressing
1 tablespoon sugar
2 tablespoons lite soy sauce
1 teaspoon rice vinegar
1/8 teaspoon black pepper
Wash spinach leaves thoroughly and remove stems.
Place spinach in a large bowl and add next 5 ingredients (tomatoes through oranges).
Combine dressing ingredients together in a small bowl and whisk well.
Add dressing to salad and toss gently. Top with sesame seeds.
Option- you can also use bottled low-fat soy or sesame dressing such as Anne's Naturals Soy Ginger Vinaigrette.
