What do you get when you take Greek style salad ingredients and mix them with rice? A medley of colors and tons of flavor with fiber to satisfy!
Ingredients:
1 cup brown rice
2 cups water
1 cup diced tomatoes
1 medium cucumber, chopped
1/2 cup greek style olives, pitted and chopped
1/2 cup chopped red onion
1/2 cup chopped fresh basil or parsley
1-2 cups fresh spinach leaves, trimmed
1/2 cup reduced-fat feta cheese
1 tablespoon olive oil
Juice of one lemon
Directions:
1 Cook rice according to package directions. When finsihed, remove cooked rice from pan and cool in the refrigerator in a covered container.
2 In a large bowl, combine cooked cooled rice, and the remaining ingredients EXCEPT the tomatoes. Stir gently until well blended.
3 Cover and refrigerate until well chilled. Flavors taste best when made 24-48 hours ahead of time.
4 Mix in chopped tomatoes when ready to serve. This salad works well as a main meal when paired with chicken, fish, beans or tofu!

I liked this recipe a lot but I would take it easy with the basil and lemon. I haven`t tried adding balsamic vinegar ...
