This is a fun recipe for a weekend or an out of the ordinary lunch. It will make you feel like a kid again!
Ingredients:
2 cups meatless crumbles (such as Boca Burger)
1 onion, chopped
1 green bell pepper, chopped
1/2 cup frozen corn, thawed
1/3 cup ketchup
1 teaspoon Worcestershire sauce
1 15-ounce can no salt added diced tomatoes
4 whole grain hamburger buns
Directions:
1 Coat a medium non-stick skillet with cooking spray and heat over medium-high heat. Add meatless crumbles, onion and bell pepper. Cook until veggies are tender.
2 Stir in remaining ingredients. Bring to a boil; reduce heat to low. Simmer, uncovered for 15 minutes, stirring occasionally.
3 Add mixture to buns.
4 ENJOY!
