Warm grilled veggies tucked into a pita with hummus is a perfect compliment to any lunch. Add veggies to your day in a different way!
1 small zucchini, sliced lengthwise into 1/4-inch slices
1/4 cup sliced red onion
1/2 tomato, sliced
1/2 red bell pepper, seeded and quartered
1 teaspoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon oregano
black pepper to taste
3 tablespoons hummus
1 whole wheat pita bread
1 Combine vegetables in a medium bowl; drizzle with olive oil and sprinkle with garlic powder, oregano and pepper. Toss gently.
2 Grill vegetables on a lightly greased grill rack (cooking spray works well) over medium heat until browned, about 5 minutes.
3 Spilt pita in half and spread hummus inside of each pocket. Divide cooked vegetables evenly into each pocket.
4 If you do not have an indoor or outdoor grill, a George Foreman grill or broiler will work.
