Sometimes the best sandwich filling is simple, such as this classic chicken salad. This is also great with whole grain crackers, veggies or mixed with pasta.
Ingredients:
2 1/2 cups cooked, diced chicken breast
1/2 cup chopped celery
1/4 cup chopped onion
2 Tablespoons pickle relish
1/2 cup low-fat mayonnaise
1/8 teaspoon black pepper
Directions:
1 Combine all ingredients. Refrigerate until ready to serve.
2 Use within 1-2 days. Chicken salad does not freeze well.
3 ENJOY!
