Frozen artichoke hearts make a quick and easy side dish. Keep them on hand in your freezer and dress up any meal with this recipe.
10-ounce package frozen artichokes, thawed
1/4 cup diced onion
2 garlic cloves, minced
1 teaspoon olive oil
2 tablespoons lemon juice
1/2 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 cup low sodium vegetable broth
Black pepper to taste
1 Cook onion and garlic in olive oil until tender. Add remaining ingredients and simmer 5 minutes.
2 Drain or use a slotted spoon and serve.
