What do you get when you combine mushrooms, garlic, lemon and parmesan? A wonderful savory side dish or topping for grilled chicken, pasta or potatoes!
2 pounds Crimini mushrooms, sliced
2 cloves garlic, minced
Juice of one lemon
1 teaspoon grated lemon zest
1/2 cup chopped Italian parsley
1 tablespoon olive oil
1/2 cup shredded or shaved parmesan
Black pepper to taste
Mix mushrooms, lemon juice, lemon zest, garlic and olive oil in a large bowl and toss gently.
Heat a large sautee pan over medium high heat and add the mushroom mixture. Sautee, stirring often, until mushrooms are slightly browned.
Stir in chopped parsley and sprinkle with parmesan. Serve immediately.
