This classic dish combines colorful veggies with garlic and basil. Add some color to your plate tonight!
1 medium eggplant, peeled and cut into cubes
2 zucchinis, sliced
2 green or red bell peppers, sliced
1 large red onion, diced
6 garlic cloves, peeled
2 large tomatoes, diced
1 cup low-sodium vegetable broth
2 tablespoons chopped fresh basil
Pepper to taste
1 Steam all vegetables with garlic until peppers are tender.
2 Heat vegetable broth until hot. Add vegetables and simmer about 3 minutes.
3 Stir in basil and season with pepper.
