Get your Omega-3's and Vitamin C in one dish with heart healthy salmon and fruit salsa. The fruit salsa adds tons of flavor and makes a beautiful presentation!
4 salmon fillets (about 4 ounces each)
1 large tomato, seeded and chopped
1 mango, chopped
1/2 yellow bell pepper, chopped
¼ red onion, chopped
1 tbsp chopped jalapeno
1-2 tbsp fresh cilantro, chopped
Lemon wedges
1 Preheat oven to 350. Place salmon fillets in a large baking dish with about ½ inch water in the bottom. Cover with foil and bake until fish is opaque and flakes easily with a fork, about 20 minutes.
2 Meanwhile, combine the tomato, mango, yellow bell pepper, red onion, jalapeno and cilantro in a small bowl. Refrigerate until ready to serve.
3 Serve the salmon fillets with salsa and lemon wedges. Goes well with brown rice and steamed broccoli!
