This sweet and tangy salad tastes great served over lettuce or over a toasted English muffin.
Ingredients:
1 20-oz can pineapple chunks
1 cup shredded carrots
½ cup dried cranberries
1/3 cup chopped walnuts
1/3 cup low-fat vanilla yogurt
½ teaspoon cinnamon
Directions:
1 Mix all ingredients together and chill.
2 Serve over mixed green or enjoy as a snack.
3 ENJOY!
