Help meet your quota for colorful fruits and vegetables with this delicious salad - peppery arugula meets sweet orange and is complimented perfectly by fennel.
Ingredients:
8 cups arugula leaves
3 navel oranges, peeled and cut into sections
1 cup thinly sliced fennel bulb
Freshly ground black pepper

Dressing:
ΒΌ cup orange juice
2 tbsp lemon juice
2 tbsp champagne vinegar
2 tbsp olive oil
2 tsp Dijon mustard
1 garlic clove, crushed
Salt and pepper to taste
Directions:
1 Combine dressing ingredients and whisk well.
2 Toss arugula leaves and fresh ground pepper with dressing. Arrange orange slices and sliced fennel over mixed greens.
3 ENJOY!
