|1||Spray medium skillet with cooking spray, heat skillet over medium heat.|
|2||Saute onion, carrot, lemon rind, and garlic until tender. Remove from skillet.|
|3||Spray skillet again and add mushrooms, water, and herbs. Cook over medium heat until mushrooms are wilted and liquid is absorbed. Cool.|
|4||Process cream cheese, Parmesan cheese, and half of the mushroom mixture in food processor until smooth.|
|5||Stir in onion mixture, remaining mixture and parsley. Season with salt and pepper. Refrigerate 3 hours and then spoon into serving bowl serving with assorted vegetables or whole wheat pita chips.|
