Earthy mushrooms blended with herbs, cream cheese and vegetables make a sensational spread for sandwiches, crackers or veggies.
Cooking spray
1 cup onion, chopped
1 cup carrots, chopped
2 tsp lemon rind
3 garlic cloves, minced
16 oz white mushrooms, chopped
2 Tbsp water
1/2 tsp dried thyme
1/2 tsp dried marjoram
1/2 package (8 oz) fat-free cream cheese
2 Tbsp fat-free Parmesan cheese, grated
2 Tbsp parsley, minced
1 tsp salt
1/2 tsp black pepper
1 Spray medium skillet with cooking spray, heat skillet over medium heat.
2 Saute onion, carrot, lemon rind, and garlic until tender. Remove from skillet.
3 Spray skillet again and add mushrooms, water, and herbs. Cook over medium heat until mushrooms are wilted and liquid is absorbed. Cool.
4 Process cream cheese, Parmesan cheese, and half of the mushroom mixture in food processor until smooth.
5 Stir in onion mixture, remaining mixture and parsley. Season with salt and pepper. Refrigerate 3 hours and then spoon into serving bowl serving with assorted vegetables or whole wheat pita chips.
