Baking meatloaf in muffin tins offers instant portion control! And, you can easily wrap up a serving for tomorrow's lunch.
Ingredients:
1 egg
1/2 cup nonfat milk
3/4 cup oats
1 pound extra lean ground turkey
1/4 cup chopped onion
1/2 teaspoon salt
1/2 cup grated reduced fat cheese (any variety)
Directions:
1 Preheat oven to 350 degrees. Combine all ingredients and mix well.
2 Spoon mixture into greased muffin cups (spray with cooking spray).
3 Bake for 1 hour, or until temperature in center of meat loaf is 160 degrees.
4 Cool slightly before removing from muffin cups. Serving Size: 2 muffins.
5 ENJOY!
