This popular restaurant dish gets a makeover and it's every bit as good as the original. You'll feel like you're splurging!
Ingredients:
2 tablespoons light margarine or spread
1 tablespoon flour
4 garlic cloves, minced
1 12-ounce can evaporated skim milk
1/2 pound mushrooms, sliced
3/4 cup grated parmesan cheese
1/4 cup white wine
1 tablespoon fresh chopped parsley
8 ounces dry whole wheat fettuccine
Directions:
1 Cook pasta according to package directions. In a nonstick skillet, melt butter and simmer for 1-2 minutes. Add flour and cook over low heat until it becomes a golden paste.
2 Add garlic and cook 1-2 minutes. Add evaporated milk and simmer over medium heat, stirring constantly until milk thickens.
3 Add mushrooms and continue cooking over low heat until softened. Add parmesan cheese and mix well.
4 Simmer, stirring often, until cheese melts. Remove from heat.
5 Stir in wine and parsley. Toss with fettuccine.
6 ENJOY!
