For an occasional treat, try these succulent lamb chops with a refreshing minted yogurt. Serve with brown rice or couscous and veggies.
Ingredients:
8 lamb loin chops (trimmed)
1/4 tsp salt
1/4 tsp black pepper
Cooking spray
1 cup plain fat-free yogurt, drained
1 garlic clove, crushed
1 teaspoon lemon juice
2 tbsp chopped fresh mint
Directions:
1 Preheat broiler and coat broiler pan with cooking spray. Season chops with salt and pepper and place them on pan.
2 Broil for about 5 minutes each side, or to desired degree of doneness.
3 Meanwhile, stir yogurt, crushed garlic, lemon and mint together in a bowl. Serve chops with yogurt sauce on side.
4 Serving Size: 2 chops.
