You don't need high fat dressings or mayonnaise to make great tasting slaw. Enjoy this crunchy, juicy jicama slaw in place of your ordinary salad.
1/2 cup balsamic vinegar
2 tablespoons chopped fresh cilantro
1 large jicama, peeled and shredded
1/2 cup shredded carrots
1/4 cup sliced red onion
1/2 yellow bell pepper, thinly sliced
Pinch of cayenne pepper
1 Combine all ingredients in a bowl and toss gently.
