Daikon or Asian radishes are mild-flavored and add a lot of crunch to salads. This slaw is simple and tasty.
2 cups, Daikon/white Asian radish, peeled and grated
2 cups, peeled and grated carrots
1/2 tsp, sugar (or more to taste)
1/2 tsp, olive oil
2 tsp, fresh lemon juice
1/4 tsp, salt
1 Gently squeeze out some but not all the liquid from the radish. Place in a salad bowl.
2 Add the carrot, 1/2 tsp of sugar, oil, and lemon juice and toss.
3 Season with salt and add more sugar, if desired. Cover and refrigerate for at least 30 minutes.
