Put a spin on tuna salad with this delicious and savory combination. Curry powder and crunchy water chestnuts make this especially good.
Ingredients:
1-2 tbsp chopped onion or green onion
1 tbsp lemon juice
1 can (8 oz) sliced water chestnuts
2 cans water packed white chunk tuna
ΒΌ cup low-fat mayonnaise (try Best Foods Just 2 Good)
1 tsp curry powder
Directions:
1 Mix tuna with water chestnuts. In another bowl, mix mayonnaise, lemon juice, onion and curry powder. Combine tuna mixture with mayonnaise dressing.
2 Yield: about 3 cups.
3 Serving suggestions: serve on a bed of lettuce, in a hollowed out red bell pepper, with whole grain crackers, in a whole wheat pita or on toasted whole wheat bread.
