Deep fried and processed chicken strips can be a nutritional nightmare! With this recipe we’ve made a fast and easy alternative you are sure to love.
Chicken breast halves (skinless and boneless, about 1 pound)
1 Egg
Bread crumbs (try making your own with whole wheat bread, garlic, basil and oregano!)
1 Pound chicken breasts between 2 heavy duty sheets of plastic wrap using a meat mallet or rolling pin until about 1/2-inch thick.
2 In a bowl, beat the egg. Dip the pounded chicken into the egg and then into the bread crumbs, coating evenly.
3 Arrange the pounded chicken breasts into a non-stick baking dish (or coat a regular baking dish with cooking spray) and bake at 350 for about 20 minutes or until chicken is golden (make sure chicken is no longer pink inside).
4 Slice chicken into strips and now you have healthy chicken strips! Serve with the catsup, bbq sauce, mustard or low-fat ranch dressing.
