Creole sauce is low in fat and an easy way to add flavor to white fish. Serve with brown rice and steamed veggies for a terrific meal.
Ingredients:
1 tablespoon olive oil
1 onion, sliced
1 green bell pepper, sliced
1 garlic clove, minced
1 15-ounce can no salt added diced tomatoes
1 8-ounce can no salt added tomato sauce
1 teaspoon dried basil
1/8 teaspoon red pepper flakes
1 pound tilapia or flounder fillets
Directions:
1 Heat oil in a large skillet. Add onion, bell pepper and garlic; cook until tender.
2 Stir in tomatoes, tomato sauce, basil and red pepper.
3 Bring to boil; reduce heat and cook, uncovered, about 15 minutes.
4 Place fish in tomato mixture. Cover and simmer about 10-15 minutes or until fish flakes easily with a fork.
5 ENJOY!
