Eating a healthy, fiber-rich diet can help reduce the occurrence of eating when you are not hungry. This recipe is sure to fill you up!
Ingredients:
2 cups water
1 cup quinoa
½ cup chopped dried apricots
1 can garbanzo beans, drained and rinsed
3 green onions, sliced
1-2 garlic cloves, minced
2 tbsp olive oil
Juice of 1 lemon
2 tbsp chopped fresh thyme
Salt and pepper to taste
2 tbsp slivered almonds
Directions:
1 Prepare quinoa according to directions. Let stand for 5 minutes and fluff with a fork; let cool.
2 Whisk together remaining ingredients except almonds; stir into quinoa. Cover and chill for one hour or more. Sprinkle with almonds.
3 Serve with barbequed chicken, pork or fish.
4 ENJOY!
