Just tried this soup, and not only is it easy to make, but it tastes delicious! I could hardly believe it was so few calories. Blending half the soup before serving gives it a creamy texture. I didn`t have any cilantro on hand and had to use flat-leaf parsley instead, yet the soup was still tasty. I can`t wait to try it with the cilantro. Since it was so few calories, and we had it for dinner, I served it with some toasted whole-wheat pitas spread with just a little goat cheese on top. Dipped in the soup they were perfection!
