Amazing--With a few changes...

I cooked the insides of the quesadilas before adding it to the tortillas. I add 1/2 of a large yellow onion, 1/2 red pepper, 1/2 green pepper until very tender. Right when they were done I turned off the heat and added the 9oz. of chopped thawed and squeezed spinach as well as the feta. I stirred this mixture until well combined and the feta just starting to melt. In a separate bowl I mixed the cream cheese with 1/2 tbs of garlic powder, 2 minced green onions, and 2 drops of Worcestershire sauce. I spread 2 whole 8 inch tortillas and sandwiched this with the spinach mixture. I baked in the oven on broil until brown and then flipped over the quesadilla and finished the other side. I used this As a nice vegetarian dinner and was very good and filling! I will be making this again soon!!
