Zucchini is good year-round and easy to cook. Try this outstanding recipe as a side to pasta with marinara.
2 lbs small zucchini
1 tsp olive oil
1 tsp grated lemon peel
2 Tbsp grated parmsesan cheese
1/4 tsp freshly ground black pepper
1 Cut zucchini in half crosswise, then cut each half into 4 lengthwise sticks.
2 Heat oil in a heavy nonstick skillet over medium high heat. Sauté zucchini and lemon peel about 3 minutes, stirring frequently, until zucchini is lightly browned.
3 Mix in Parmesan cheese and pepper to taste.
